舰船食品保鲜的气调储藏技术探讨

摘    要:采用新的舰船食品保鲜技术——气调储藏法,将革新舰船用冷藏技术,大大提高食品储藏期和舰员的生存能力、生活水平并提高舰船的自持能力。介绍了舰船传统食品的储藏方法,阐述了食品的腐烂变质机理、气调储藏保鲜的原理、方法以及工艺。在试验研究基础上,提出了气调储藏法在舰船上运用的实施方案。

Abstract:This paper introduces a new technology for food products preservation in ship. By a modified enviroment for food storage, the shelflife of food products can be lengthened with freshness unchanged. The endurance of ship under way therefore is increased due to the use of this storage technology. The traditional process of food storage in ship is analyzed. How does this new storage technoloy work and how to apply this technology to ship are investigated. For this purpose, an application of this new technology is put forward.
