摘    要:用模拟人体消化吸收法(生物膜透析)研究了婴幼儿可用食品对强化奶粉铁和蛋黄铁吸收的影响。结果表明:维生素C、半胱氨酸、鸡蛋清、柑、桔、猕猴桃、菠菜、油菜、大白菜对奶粉和蛋黄铁吸收有明显的促进作用(P<0.05),其中桔、柑、猕猴桃的促进作用显著高于等量维生素C 的效果(P<0.01)。本文对测定方法亦进行了较详细的讨论。

Abstract:This paper describes the use of an invitro method for estimating food iron avai-lability and with this method the effects ofselected foods on nonheme iron absorption ofegg yolk and cow's milk powder were deter-mined.The results showed that the ironabsorption was enhanced by orange,citrus,actinidia chinensis pianch(P<0.01),spi-nach,cole,cabbage,ascorbic acid,cysteineand egg white(P<0.05).
