我国铁路动车组餐营卫生和管理现状调查与对策探讨

动车组餐饮供应是一种全新的经营模式,为确保铁路客运安全,对当前各型动车组（一型、二型、三型和五型）的供餐方式及车厢内部卫生设施进行调研,对动车组的食品安全卫生特点、监督管理体系等问题进行深入探讨、评价和总结,并科学地提出改进建议和措施,确定动车组最安全的餐供方式。同时,积极探索符合动车组实际的新的卫生监督管理模式,为铁道部卫生决策部门建立有中国铁路站车餐饮特色并与国际接轨的集质量、环保、职业安全健康于一体的铁路动车组站车食品安全管理体系的制定及科学的决策提供参考。

Investigation on the Catering Health and Management Situation of Chinese Railway EMUs and the Countermeasure Discussion

EMUs Catering is a new business model, to ensure the safety of the railway transport of passengers, we will conduct an investigation on the ways of providing catering and the sanitation inside of carriages of present various types of EMUs（type I , type II, type III and typeV ）. Through the research and summary on the characteristics of food safety and hygiene and the supervision management system, we will propose the improvement suggestions and measures, and then determine the safest way of providing catering. At the same time, we will try to explore a new health supervision and management model which corresponds with the practical situation of EMUs, and then provide reference for Decision-making departments of Health Ministry of Railways in Scientific decision-making and the formulating of Railway station EMUs food safety management system which is with Chinese Characteristics and geared to international standards and a combination of quality, environmental protection and occupational safety.
