摘    要:以壳聚糖微球固定化单宁酶,制成填充床式反应器连续澄清绿茶汤.通过均匀设计法优化茶汤澄清工艺,检验澄清后的绿茶汤理化性质及固定化单宁酶的稳定性.以茶水比为1:100,反应温度为50℃,茶汤流速为2.5mL/min时澄清度最高,透光率超过99%.与抽滤、离心等常规澄清方法相比较,澄清度高、茶多酚、咖啡因、氨基酸损失率低,茶汤口感好.连续澄清280min后,固定化单宁酶酶活为初始酶活的3.07倍.用该方法处理的绿茶汤澄清度高、品质好,具有工业运用前景.

Abstract:Clarification of green tea extract was gotten by immobilized tannase reactor in this paper. Uniform design method was used in the optimization process. The physical and chemical properties of tea soup and the stability of immobilized tannase were invested after clarification. The results show that the most transparence of tea extract is over 99% when the ratio of tea to water is 1 : 100 and soup flow rate is 2. 5 mL/min at 50 %. The clarified soup is much better than centrifuged and filtrated soup according to transparency degree and the contents of tea polyphenol, caffeine, and amino acid. The activity of immobilized enzyme is durable for 280 rain continuous operation. The clarity and quality of the treated tea extract became great. The clarification method with immobilized tannase can be applied in the tea beverage industry.
