脱氧剂在食品保存中的应用及发展方向

摘    要:近年来随着食品工业的发展,消费者需要高质量特别是鲜度质量高的食品。因此,为了满足这种要求,开发了各种保鲜剂和保鲜技术。脱氧剂问世已很久,而应用于食品保鲜,仅二十年左右的历史,已在各种保鲜技术中占有一定的位置。文章从食品腐败变质的原因、保存方法着手阐述脱氧剂在食品保存中应用与开发。

Abstract:As the recent development of food industry, customers are in bad need of the improvement of the quality especially that of the fresh degree. So many fresh preserver and technology have been developed to meet such requirement. Oxygen absorber has been made for many years, while applied to the fresh preserving of food only 20 years ago, and now has its definite position in various fresh preserving technology. By analyzing the deterioration reason and preserving method of food, the paper expatiates oxygen absorber's application and development in food preservation.
